Happy pancake day

Stuck for a dinner idea? Today is Shrove Tuesday, also known in England as pancake day, based on the it being a last feast to consume rich foods such as sugar, fat and eggs whose consumption was traditionally restricted during lent (beginning tomorrow). I have fond memories of this day, we didn't eat pancakes regularly like we seem to here in the US and so on pancake day my mum would stand in the kitchen flipping pancakes and we would eat and eat and eat delicious pancakes drenched in sugar and lemon juice. Not your typical pancake though, more like a crepe. My mum never really followed a recipe but something like this 4oz flour, 1 egg, 1/2 pint of milk, pinch of salt, mix together until smooth and a little runny, let stand for 1/2 hour or so, fry in a pan and serve with lemon and sugar, delicious!!

Too bad we did pancakes last night. I always thought more crepe like was better. Mmm, lemon juice and sugar, that's my favorite topping.

yummy...that sounds fantastic, I missed it yesterday but maybe we will put it in some other night this week :D

Yay for Pancake Day! We didn't have pancakes but I sure did think about them all day. :)
